Beef & Kimchi Soup 🌶️🥬
This soup packs a punch of heat - and lots of delish probiotics, collagen, minerals, and other yummy feel-good ingredients.
After making a huuuuge batch of kimchi, I realized I’m not a fan of eating cold food when its frigid outside - so I turned it into this spicy, complex soup packed with so many nutrients and feel good things.
Of course, I love making everything from scratch, but this recipe will be just as delish (and quick) with store-bought kimchi and bone broth. This dish is simple, straightforward, and so so so healthy.

Ingredients:
1lb grass fed ground beef
2 cups of kimchi
2 carrots, chopped
3 stalks celery, chopped
1 white onion, chopped
1 sweet potato, grated
1 inch ginger, minced
2-3 garlic cloves, minced
1 TBS gochugaru flakes
3 TBS gochujang
1 package sprouted tofu, cubed
1 carton (4 cups) beef bone broth (I love Fond, Kettle & Fire, or Trader Joe’s brand)
Green onions, sliced (just the green parts)
2 TBS sesame oil
salt + pep to taste
Instructions:
Heat the sesame oil in a heavy bottomed pot
Add in onions, carrots, celery, garlic, and ginger and stir until translucent and fragrant
Add in the grated sweet potato
Add in the ground beef to brown
Season with a bit of salt + pep
Once beef is about half way cooked, sprinkle in chili flakes and add in gochujang paste, stir to combine
Pour in bone broth and bring soup to a simmer for about 10 minutes
Once soup has simmered for a bit, drop in your cubed sprouted tofu pieces, give a good mix, then let simmer for another 10 minutes
Season to taste and top with sliced green onion
